Fitting into old jeans!

I had Grey just over three months ago and losing the incredible amount of baby weight I put on has been difficult to say the least (especially when I love to bake so much). Today I finally officially fit into pre-pregnancy jeans! I have been wearing them around for a while, stuffing myself into them and wearing baggy shirts to cover the muffin top. No More! This is very exciting indeed! (I still have about 17 pounds to lose to get back to my prepregnancy weight, however).

 

OK, let’s try this again!

Where to begin? I have started blogs (including this one) and never stuck with it, but I am going to try again. I think it will be a great way to keep in touch with my friends and family and to organize my own thoughts.

 

In the last year I moved, got married, had a baby and quit my job. I have started cooking more and knitting; of course the biggest thing is that I have started being a mother. It has been amazing and challenging, as each day goes by I love it more and more.

 

Here are some of the things I hope to accomplish with this blog: talk about the challenges of parenthood, share my knitting projects, weight loss, talk about food, farming and supporting local economies. This isn’t a comprehensive list, but a start.

 

One of the things I love in reading other blogs is learning about the person I am reading about; what makes them tick, what is/was their life like, etc. Every Friday I will write a post called, “Flashback Fridays”. I am going to write about my past and that can be anytime from the day I was born until the day before I wrote this post!

spreading veganism one muffin at a time

I am currently teaching a nutrition class. There is a curriculum which has been written by ConAgra (barf!) and compares the nutritional value of a filet o fish to a cheeseburger at McDonald’s. I get it, ConAgra, you are trying to engage people who probably already eat at McDonald’s and want them to make the healthiest choice possible, but how about we don’t include any fast food in the curriculum and instead teach people how easy it is to make food at home and how to make smart choices by not eating fast food!

Each week in the class we have a nutrition discussion and we cook a meal together. I am teaching teenage moms, or soon-to-be moms. It is a wonderful class with some truly amazing young women. The last couple weeks I have been sneaking vegan food to them. Last week we made an entirely vegan meal and no one noticed until I told them! I also talked to them about veganism, why I am vegan and that they will meet lots of people with different dietary lifestyles in their future. Everyone was really receptive and they were all excited to see me eating again this week.

Today I used a recipe by a fellow blogger and ppker, The Elizavegan. We used this recipe for Chocolate Chip Pumpkin Muffins. They were thoroughly enjoyed by all and every last one of them was eaten! I wish I had more time with these ladies because they truly seem interested in learning about cooking and baking. As each week passes they become more and more engaged, and I am happy to share my knowledge of nutrition, cooking, and veganism with them!
